Why this dish?

Real Irish stew is humble on purpose: neck or shoulder of lamb (or mutton), potatoes, onions and not much else, simmered slowly so the potatoes half-dissolve and thicken the broth. Some add carrots and barley; purists tut. It's gentle, savoury, and built for cold, wet evenings - which Dublin supplies for free.
