Why this dish?

The origin story is famous and fiercely claimed: in the 1970s, Ali Ahmed Aslam at Shish Mahal in Glasgow's West End supposedly added a tin of condensed tomato soup and a handful of spices to dry chicken tikka when a customer sent it back. The result - tender marinated chicken in a rich, creamy, mildly spiced tomato sauce - went on to become the most ordered dish in British restaurants and, arguably, the world's most popular curry. Whether the exact tale is true or embellished, Glasgow owns it and Shish Mahal is still there.

That's what makes this a proper pilgrimage: not just a great dish, but a dish with a traceable birthplace you can walk into and eat at. Shish Mahal hasn't moved. The menu still leads with the tikka masala. Glasgow itself is Scotland's biggest, most energetic city - Victorian architecture, live music on every corner, and a deep, proud food culture that's far more than haggis. Fly up, eat the world's favourite curry at the restaurant that claims to have created it, and be home by evening.

Good to know

Glasgow claims chicken tikka masala; Birmingham also claims it; the internet argues endlessly. Don't pick sides - just eat it at Shish Mahal and form your own opinion. Glasgow's West End (Byres Road, Ashton Lane) is the food and pub neighbourhood; the city centre and the Kelvingrove Museum are walkable from there. The airport bus reaches the centre in about 25 minutes.
