Why this dish?

Jersey bean crock is the island's slow-cooked soul food: dried haricot beans layered with pork belly, onion, carrot and a pig's trotter (for body and gelatine), seasoned simply and baked in a covered crock pot for hours - traditionally overnight, in the cooling embers of a baker's oven. The result is thick, porky, deeply savoury and unapologetically plain, the beans absorbing the stock and pork fat into something far greater than the parts suggest. It's Jersey's answer to cassoulet, and the islanders are quietly proud of it.

Jersey is the wild card on this map: a Crown dependency closer to France than England, with its own currency, its own cows (the famous Jersey breed) and its own food traditions shaped by centuries of Norman-French influence. St Helier's Central Market is a Victorian gem, the coast is stunning, and the flight from Gatwick is 45 minutes - shorter than most train journeys to the airport. Good to know

Bean crock is traditional and seasonal - not every restaurant has it every day, so ask ahead. Jersey Royals (small, waxy, nutty potatoes) are in season from March to June - try them. Jersey is tiny (9 by 5 miles) but has stunning coastal walks, castles and beaches. The bus from the airport to St Helier takes about 15 minutes. Jersey uses its own pound (interchangeable with GBP on the island but hard to spend on the mainland).
