Why this dish?

Fårikål - literally "sheep in cabbage" - is about as honest as a national dish gets: bone-in lamb and chunks of cabbage layered in a heavy pot with whole black peppercorns and a little flour, covered with water and left to simmer for a couple of hours until everything turns meltingly tender. Served with boiled potatoes, it's pure, peppery, autumnal comfort.

Norwegians voted it their national dish more than once, and there's an official Fårikål Feast Day on the last Thursday of September. That seasonality is the catch and the charm: this is a dish tied to a time of year and a place. Fårikål is firmly an autumn dish (peak around the late-September feast day) - outside that window it can be hard to find, so check before you fly.
