Why this dish?
Cacio e pepe is Roman minimalism at its peak: tonnarelli or spaghetti tossed with grated Pecorino Romano and freshly cracked black pepper, bound with nothing but a splash of the hot, starchy pasta water whisked into the cheese to form a glossy, clinging cream. There's no butter, no oil, no cheat. When it works it's magic; when it's rushed the cheese clumps. Getting it right is a genuine skill.
That high-wire simplicity is the whole reason to eat it at the source. Roman trattorias make it look effortless because they've made it ten thousand times. Pair it with a glass of Frascati, somewhere with paper tablecloths and a brisk waiter, and you've eaten one of the great three-ingredient dishes on earth in the only city that truly owns it.

Good to know
The sauce should be creamy and clinging with no clumps - that emulsion is the test of a good kitchen. It's one of the four Roman classics (with carbonara, amatriciana, gricia); a "tasting" across a couple of meals is a fine plan. Testaccio is the food-lover's neighbourhood.
