Why this dish?
Pierogi are Poland's national dish and, depending on who you ask, possibly the world's most comforting food. These half-moon dumplings - made from unleavened dough, folded around a filling and then boiled, before being pan-fried in butter - exist in dozens of variants. The classics: ruskie (potato and farmer's cheese with fried onion), z mięsem (minced meat and sauerkraut), z kapustą i grzybami (cabbage and wild mushroom). Every family has a version. Every grandmother has a secret.
Warsaw's pierogi have a particular directness - no fuss, generous portions, proper ingredients. The city's milk bars (bar mleczny) have been serving them to students, workers and anyone with a few złoty since the Communist era. Eating pierogi in a Warsaw milk bar, surrounded by locals, is one of the most honest food experiences in Europe. And Warsaw flights are among the cheapest from any UK airport.

Pierogi are available everywhere in Warsaw - restaurants, milk bars, market stalls. Quality is very high across the board because the dish is culturally important - no Warsaw cook cuts corners on pierogi. The main variation is filling ratio to dough; thinner dough generally signals a more skilled kitchen.
