Why this dish?

Lohikeitto is a creamy salmon soup: salmon poached just until it flakes, in a broth of potato, leek (or onion) and a little cream, finished with a generous handful of fresh dill and a knob of butter. It's not heavy - it's clean and bright, the salmon and dill doing most of the talking - and it's served with dark Finnish rye bread to dunk. Simple, nourishing, and exactly what the climate calls for.

Helsinki suits it perfectly: a calm, design-obsessed Baltic capital of clean lines, seaside saunas, an Art Nouveau market hall and island-dotted harbours. The Finns have a genius for unfussy comfort, and a bowl of lohikeitto in the historic Old Market Hall or a classic restaurant - with rye bread and maybe a cold beer - is the edible version of that aesthetic. Good to know

Lohikeitto is meant to be light and clean, not stodgy - the dill is essential. Dark Finnish rye bread is the classic accompaniment. Helsinki is expensive (Nordic prices) but the market-hall soup is good value. The compact centre, harbour and Market Square are walkable; the train from the airport takes ~30 min. Consider a public sauna if you have time - it's the national pastime.
