Why this dish?

Mulgikapsad comes from the Mulgi region of southern Estonia: fatty pork braised slowly with sauerkraut and pearl barley until the barley swells, the cabbage mellows and the whole thing becomes a rich, tender, gently tangy one-pot. Often finished with a little sugar to round the sourness and served with boiled potatoes, it's honest farmhouse food built for long, dark northern winters.

Tallinn's old town is the draw: an astonishingly intact medieval merchant city of cobbled lanes, spires, guild halls and city walls - genuinely fairy-tale, and compact enough to see in an afternoon. Estonia is also famously digital and forward-looking, which makes eating a centuries-old peasant dish in a candlelit tavern a lovely contrast. Good to know

It's rich, slow-cooked winter food; a little sweetness against the sour cabbage is traditional. Tallinn's walled old town is the highlight and entirely walkable from the centre (~20 min from the airport by tram). Estonia uses the euro and is delightfully cashless and tech-friendly.
