Why this dish?
The Portuguese say there are 365 ways to cook bacalhau (salt cod) - one for every day. Bacalhau à Brás is among the most beloved: desalted cod shredded fine and folded through sautéed onions, thinly cut fried potatoes and beaten egg, cooked just until creamy (never dry), then crowned with black olives and chopped parsley. Comforting, savoury, a little luxurious, and unmistakably Lisbon.
Salt cod is woven into Portuguese identity - "o fiel amigo," the faithful friend - and à Brás is the dish that shows why a preserved fish became a national treasure. It's a second, savoury reason to fly to Lisbon (you may already know the city for its custard tarts).
