Why this dish?
Bouillabaisse began as a Marseille fishermen's stew of the bony rockfish nobody would buy, simmered with tomato, fennel, saffron, garlic and orange peel. The proper version is served in two parts: first the rich, rust-coloured broth, ladled over croutons spread with rouille (a garlicky, saffron-chilli mayonnaise) and grated cheese; then the poached fish presented and filleted at the table.
You can find "bouillabaisse" all over France, but the real thing - made with Mediterranean rockfish, served as a two-act ceremony - belongs to Marseille. Eaten looking out at the Vieux-Port or a rocky cove, with the city's rough, sunlit energy around you, it's a meal that tastes of exactly where you are. Worth flying south for lunch.

True bouillabaisse is expensive and often must be ordered in advance (and for two) - phone ahead. Be wary of cheap "bouillabaisse" near tourist spots; look for the Charte de la Bouillabaisse Marseillaise. The rouille and croutons go in the broth, not on the side. Pair with a chilled Provence rosé.
